This Festive Cocktail – How to Make It

WThis is a home-style version of a cocktail featured on our latest cocktail list. It's a party-sized prepared mix that is bursting with flavours of the festive period, making it excellent for a celebration. Save the extra citrus syrup you can use for breakfast cocktails, puddings, or for another batch of the drink.

The Bikini Cocktail

Serves 10 guests

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Drink (makes 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Cordial: Place all the ingredients inside a pan, heat until it reaches a gentle boil, mixing to dissolve. Next, remove from the heat and leave to cool completely. Decant to a sterilised bottle, close it and refrigerate it in the fridge, it will last for up to four weeks.

For the Cocktail Base: Pour the specified liquids into one big jug, allow it to infuse for an hour, then pass it through preferably using muslin, so it's fully clarified.

When ready to serve: Pour 85ml of the premix to a stirring glass filled with ice, gently stirring lightly for about 60 seconds to cool it down. Strain to a cold coupe glass or similar, garnish with some cranberries and finish using a quick spritz of mandarin oil over the drink.
